Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened.
  2. Add the carrots, celery, thyme, and bay leaf, and cook for a few more minutes.
  3. Pour in the chicken broth and bring the soup to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
